I'm unable to open TouchCopy for Mac from my application folder.

Some users of TouchCopy Mac have experienced problems due to recent changes in Apple's QuickTime software.

The problem does not appear to be down specifically to TouchCopy but any application that uses Quicktime and Java - like TouchCopy does. The solution is to download and re-install QuickTime from Apple.
